Fruit Salsa Recipes 1

Peach Salsa

*1 cup peeled and chopped peaches

* ¼ cup chopped red onion

* ¼ cup chopped yellow or green peppers

*1 Tablespoon lemon or lime juice

*2 tablespoons snipped fresh cilantro, parsley or basil

*1 teaspoon sugar

*Dash of ground red pepper

In a bowl mix everything together, cover chill for a few hours. Makes 1¼ cups. Recipe can be doubled.

Peaches can be substituted with apricots, hard pears or most any fruit that you like.

Mango Fruit Salsa

*1 Mango, peeled and diced

*3 peaches, peeled and diced

*1 jalapeno pepper diced

*1 Vidalia onion chopped

*1 Red pepper diced

*3 scallions sliced thin

*3 limes juiced

Mix every thing and serve chilled.

Mixed Salsa

WOW GET READY FOR A TREAT

*2 pints strawberries clean and remove stems and dice

*4 kiwis peeled and diced

*1 Granny Smith apple peeled and diced

*3 tablespoons orange marmalade

*1 orange rind grated

*1 pint fresh blackberries, diced

*1 pint fresh raspberries, diced

* ½ cup sugar

In a large bowl mix everything and sprinkle the sugar and toss lightly to blend the sugar.

Pineapple and Cucumber Salsa

*1 cup of pineapple fresh or canned

*1 cup of cucumber diced

*2 larges toes of fresh garlic

*2 teaspoons fresh ginger, minced

*8 Mint leaves shredded

*4 teaspoons fresh cilantro chopped

*2 lemons juiced

* ½ fresh chili pepper minced

* ½ Vidalia onion minced

Carefully fold in pineapple and cucumbers. Add the garlic and ginger, folding gently. Add the mint leaves, cilantro lemon juice chili pepper and onion.

Dig in with the chips.
