Fried Chicken Recipes for Pollo Fritto

1 chicken, quartered 2 tablespoons olive oil 2 eggs Juice of a lemon Flour Olive oil for frying or use you deep fryer such as a fry granddaddy Salt and pepper to taste

Put chicken in a bowl. Mix the 2 tablespoons of olive oil salt and pepper, the lemon juice in another bowl and mix thoroughly using a fork or whisk.

Pour this mixture over chicken turning to coat all sides, and let marinade for about an hour, turning from time to time. Heat the oil in the pot.

Remove chicken pieces from the marinade and pat dry. Beat the eggs in a bowl seasoning with the salt and pepper. Dredge the chicken in the flour and dip in the egg mix and slip into the oil. When well browned, take from pot, drain on paper towels and dry.

Maryland Fried Chicken

1 chicken cut in pieces 1 cup bread crumbs 2 tablespoons butter 2 eggs well beaten Easy ½ cup minced salt pork Salt and pepper

Put bread crumbs in a plastic bag. Combine well beaten eggs salt and pepper and two tablespoons of water in a shallow bowl. Dip chicken pieces in egg mix and dredge in bread crumbs. Fry salt pork in a heavy skillet until crisp and brown. Add chicken to skillet, cook solely until brown on all sides. Season with salt and pepper, spot with butter and cook in preheated 325 degree oven covered. Bake until tender about 45 minutes to an hour.

This unique method of fried baked chicken gives a curious and delightful taste and is one of my favorite fried chicken recipes.

Honey Fried Chicken

1 chicken cut into six pieces ½ cup honey 2 tablespoons of fruit vinegar ½ cup of flour 2 tablespoons whole wheat flour 2 teaspoons cayenne pepper 2 eggs ¼ cup of buttermilk 1 cup olive oil Salt and fresh ground pepper

Cut the chicken in six large pieces, save the back bone, wings and neck for stock pot. Stir the honey and vinegar together and pour over chicken. Marinate for at least two hours, stirring occasionally. In a bowl combine both flours and cayenne pepper, set aside. In another bowl make an egg wash by whisking together the buttermilk and eggs.

In a large heavy skillet, heat the oil over medium to high heat to around 300 degrees, cook at low temperature to keep the honey from caramelizing too quickly or burning. Remove chicken from the marinade and drain on paper towels. Dip chicken in egg wash, sprinkle salt and pepper and dredge in flour mix, evenly coating thoroughly.

Gently put dark meat chicken in the pan for 5 or 6 minutes on the first side until browned. Turn and add the white meat and continue cooking, adjusting the heat so it doesn’t brown too quickly. It takes about 15 to 20 minutes for dark meat and 10 to 15 for white meat.

Ethel’s Best Georgia Fried Chicken (This is truly one of the best fried chicken recipes ever!)

1 Small Chicken cut in pieces (1 1/2 to 2 pounds), Chill 3 cups of flour in plastic bag Salt and pepper (lots of salt and pepper) Peanut Oil to cover

Put flour, salt and pepper in plastic bag add chicken large pieces first and shake well coating pieces thoroughly.

In a deep heavy pot or a large frying pan put enough oil to cover chicken, when oil is hot, place chicken into pan and cook covered for five minutes. When one side is brown turn over and cook that side. When that side is brown cook uncovered about thirty minutes. Turn onlyonce, as too much turning toughens the bird.

Note: The oil should be deep enough to cover chicken.

Ethel’s Fried Chicken Creamy Gravy

Pour off all the grease, leave only 2 to 3 tablespoons in the pan with the crumbs, add 2 tablespoons of butter, 3 tablespoons of flour, blend and cook until brown: add 1 cup of milk and a cup of water. Stir until smooth and the right thickness. Add salt and pepper.

Enjoy on rice, biscuits or chicken.
