Chili Con Carne Casserole
2 large cans 16 ounce red beans or kidney beans 3
pounds of lean ground beef ¼ teaspoon of cayenne pepper 4 tablespoons
chili powder 4 tablespoons on cilantro ½ teaspoon oregano 4 large
onions chopped 8 cloves of garlic chopped or pressed 6 tablespoons
olive oil 1 large 16 ounce cans of Italian tomatoes 1 small can
of tomato paste 1 lb. macaroni cooked al dente (partially cooked)
Sauté ground beef and onions in the olive oil with
cayenne pepper, chili powder, cilantro, and oregano. Drain. Add
drained beans and macaroni. Place in casserole dish uncovered and
cook at 375 degrees for twenty minutes.

Beef (Veal) Casserole
1 large veal cutlet or four loin veal chops ½ cup
olive oil 2 medium sized onions thinly sliced 1 cup green peas 1
bay leaf 2 tablespoons flour 1 teaspoon marjoram ½ teaspoon thyme
½ cup of coffee cream 1 teaspoon Worcestershire sauce Salt and pepper
Dash of Tabasco ¼ cup of sherry
Cut veal in serving pieces and brown well in olive
oil in heavy frying pan. When well done, add the thinly sliced onions
and cook partly. Remove veal to buttered casserole dish, placing
peas and onions on top of it. Add bay leaf. Put flour, marjoram,
and thyme in frying pan with 2 tablespoons of oil and smooth to
a paste. Add cream, Worcestershire sauce; salt, pepper and Tabasco
to taste. Add sherry. Pour mixture over veal. Cook in 350 degree
oven for 45 minutes. These beef casseroles serve four.

Yorkshire Steak Casserole
2 pounds round steak, thick (cut into one inch cubes)
Olive oil Salt and pepper 2 Cups flour 2 teaspoons baking powder
1 teaspoon salt 2 egg yolks beaten 1 cup milk 1 teaspoon Worcestershire
sauce Dash of Tabasco 2 egg whites, stiffly beaten
Brown steak on both sides in the oil; Season to taste
with salt and pepper.
Sift dry ingredients together and add egg yolks,
milk, Worcestershire and Tabasco.
Mix well and fold in egg whites, stiffly beaten.
Place steak in casserole or baking pan and pour the above mixture
over it. Bake in 350 degree oven for about 90 minutes. These beef
casseroles serve six to eight.

Corned Beef Casseroles
1 can corned beef 1 can cream f chicken soup 1 large
onion cut small ¼ pound American cheese diced 2 cups cooked egg
noodles ½ cup milk Pepper to taste
Combine everything and cook one hour at 325 to 350

Beef Goulash Casserole
2 pounds of beef cut in chunks 1 tablespoon olive
oil 1 ½ cups chopped onion 1 can of zippy tomato soup 1 lb. pasta
cooked al dente (partially cooked)
Sauté meat and onion in oil. Add soup. Put in covered
casserole dish with pasta and bake in oven at 350 degrees for thirty
minutes for one of the best beef casseroles on earth.
